Story:

He grew up in the Stockyards neighborhood of Chicago, and there Chester Berghoff was apprenticed as a butcher before his 14th birthday. Chester could have enjoyed a secure and predictable life in Chicago, but his boyhood readings made him anxious to see the Wild West for himself. As a young man he boarded a train for Liberty Falls with all his worldly goods in two small bags and a knapsack. Two decades later, the “Berghoff Butcher Shop” reigns as one of Liberty Falls’ most successful small businesses.

Back in Chicago, Chester spent most of his time butchering hogs and cows with the occasional lamb and sometimes poultry. In Liberty Falls his talents were further tested, since the locals enjoyed wild game as well. Before long, Chester mastered the art of butchering deer and buffalo, and of dressing pheasants and other game birds that would make their appearance “at table.” His shop bustled all day long with private customers as well as errand boys picking up orders for the local restaurants and hotels. At night Chester joined his family in their quarters above the shop, but he always turned in early so he could rise before dawn and prepare his shop for another day of business!
